Quick, Easy, and Yummy
Summary
Gail and I did a lot of traveling today, so by the time we got home, I was tired, hurting, and a little bit frustrated. We were also hungry, so I knew I had to cook one of the meal kits that Hello Fresh delivered to us today. I decided I would make whichever meal had the shortest amount of time listed on the recipe card. The Shrimp and Zucchini Linguini with Garlic Butter and Parmesan said it would only take 10 minutes to prep and 20 to cook, so it was the solid choice. (The others mentioned 40 minutes or so, if I remember correctly).
Despite my weariness, this meal came together in no time. There was only the one zucchini to slice, so that was a 30 second chore. When prepping veggies is easy, everything else is usually super easy. That was the case here. Throw the linguini in the pot, saute the zucchini and shrimp, and mix it all up at the end.
The kit came with a little packet of pre-mixed garlic butter, and of course, that gave it a nice flavor.
I’m generally not a big fan of long noodles that I have to fight with. My talents don’t generally extend to the art of gracefully getting noodles into my mouth. I would never order a spaghetti or linguini dish in a restaurant because I really don’t want to look like I have octopus arms hanging off my face. But here at home, I suppose it’s okay. Despite my ungraceful appearance when I ate the linguini tonight, I enjoyed the dish quite a bit, and Gail did as well.
And I’m not any more tired than I was before. Bonus!

Tip
Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
