Melty Mozzarella Burgers with Caramelized Onion and Balsamic Greens on Ciabatta

Personally, I would have given this dish 5 stars, but I had to bring the flavor rating down a bit because Gail was disappointed. She liked the flavor, but she expected a lot MORE cheese based on the photo she saw. Now, I actually piled on the cheese, but she didn’t feel like she really had much and didn’t think she could really taste it. So, although I loved this dish, and she liked it, it had to take a hit on the score.

The salad was surprisingly good. Frankly, I didn’t think either of us would like the salad after I realized what the ingredients were. But dang, we both scraped the plate, leaving not a crumb. Who’d a think a tomato-paste-based-sauce would work on a salad. With dried cranberries no less! But it did.

Summary

Superbly surprising salad, paired with a fantastic burger. Add more cheese if you like, but trust me. This is a darn good burger as is.

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
